I am cooking Cedar Plank Salmon on the grill and want to know if I should leave the skin on the salmon until after done cooking, or if taking the skin off before grilling will add more plank flavor. Thoughts???????

The skin is the best part. Throw that pink part away, and eat the skin.

That's what I do.

Leave the skin on to retain the moister in the fish, salmon will dry out quickly without the skin.
You can put a few chunks of cedar in a small bag made of aluminum at the edge of the fire to get a lot of smoke for flavor. The bag should be a couple of layers thick with a small opening so the wood doesn't have enough air to ignite

It doesn't really matter flavor wise. The cedar flavor should come from it's smoke and not contact with the board. Also, it would be easier to take the skin off after cooking. The skin is good for you, if you like to eat it!

If you take the skin off before cooking, a lot of the flesh is likely to fall off into the fire. Remove the skin after cooking - the fish will have plenty of smoke flavor despite the skin's presence.

Leave it on. The skin has some fat under it and will keep the meat soft and juicy.

leave it on during cooking, then peel off after its done...
