What do you think the letters we use are? All languages use symbols in written language.

Technically all languages both the spoken and the written use symbols. The ones you listed use symbols for complete words but others use symbols for sounds.

Mayans used a form of glyphs, not sure what other civilizations did.

I think you mean to ask whether we know of other languages that have idiogrammatic writing systems, e.g., characters or pictograms for whole words, instead of alphabets or syllabaries that allow you to sound the word out.

I know that the Mayans had a sort of hieroglyphics which are known thanks to surviving fragments of the Mayan Book Of The Dead (the voyage of the souls of the deceased through the worlds of the Creator). The Mayans had a library containing about two hundred slabs of wood (their books) covered with this hieroglyphic writing. The Spanish conquerors sent a priest to decide what to do with them. He studied them and decided that they were the work of Satan and should be destroyed... they burnt the library.

Arabic, Russian, there are lots. Most Asian languages have symbols.
