Is it because the Spanish completely destroyed them and burned every last trace of literature because they were hesitant to give up their ancient beliefs in favor of Christianity?

It is because the Spaniards regarded the Mayan writings to be 'heretical' (non-biblical)... the very same reason that Christians went on a rampage, spending about 300 years torturing and killing everybody who did not agree with them, and destroying all 'heretical' (non-biblical) knowledge... over 1,000 years worth of the accumulated knowledge and wisdom of mankind... philosophy... art... astronomy... mathematics... engineering... sanitation... medicine... basically, all the good stuff. This led directly to the 1,200 years or so of christian-enforced ignorance and misery that we have come to know as the Dark Ages. http://www.askwhy.co.uk/christianity/0780Bookburning.php

One thing about conquerors, they destroy the evidence, and then rewrite it and create new evidence to go with the history, they write, to suit their purpose!! And many Spaniards considered the Mayan, like the Aztecs, to be heathens, and as such were expendable!
! We will never know very much about the ancient Mayans, but, at least they had descendants that would know some of this stuff!
They don't know very much about the Anasazi Indians, either! It would be interesting to see where they went, and what happened to them! But, not much remains of them at all!

That's pretty much it, considering they did have a written language. Would you want to give up your beliefs? especially if you were forced
