Veggie Fritatta
Thinly slice 1 potato, 2 med. zucchini, one red or orange bell pepper. Saute in 2 tbsp olive oil. Season with salt, pepper, garlic granules.
Grease round baking dish and put vegetable mixture in it. Beat together 8 eggs with a little salt and pepper and pour on top of the vegetables. Sprinkle with Parmesan cheese and bake at 300 until eggs are set and edges browned.
Can also be cooked as an omelette...

Usually I saute some onion and then add eggs and a little fresh thyme, salt and pepper to make scrambled eggs.
I found a really good recipe in Lidia Bastianich's Italian American cookbook where you dice an Idaho potato and then fry it in a skillet until it's golden brown. Next you add beaten eggs, a little chopped rosemary, salt and pepper and cook until the eggs are set. Really good and easy!

Usually whatever I've got leftover in the fridge.....Any and/or all of the following: chopped onion, diced tomatos, bell pepper, mushrooms, garlic, ham, bacon, sauage & plenty of shredded cheese. Season lightly with a little cajun seasoning.

I also really like carmelized onions w/ lots of fresh thyme and garlic and sliced, sauteed red-skinned potatoes and goat cheese or feta. I like asparagus and ham and cheddar. I say the more vegetables, the better w/ omelettes, and pesto, fresh tomato (sauteed first so it's not too wet...) and fresh mozzarella are ALL killer. It's hard to go wrong. I also really like garbage omelettes w/ homemade toasted bread w/ orange marmalade and a lovely cup of Constant Comment Tea w/ milk and a bit of local Vermont honey for weekend breakfasts. Some of life's small pleasures...

I beat about 4 eggs and add a tbsp of milk,then set it aside.....
I then chop onions red,green,yellow and orange peppers and
satee them in a tbsp veg oil.I then fry up either ham or bacon and drain all grease.I then mi the eggs and put into a hot pan...mi the egg all around shape of pan then add all my peppers and put a lid on it.........they are fluffly ,moist and tasty..........cheese is an option should you choose to add it.Enjoy

hmm depending on what I have in the house it varies.
But I typically have ham, bell peppers (red, green or both) yellow onion, mushroom and of course cheese, but I also like black olives, fresh tomatoes, cilantro and jalapenos.

Onions, sweet peppers cheese, taters, mushrooms and whatever meat happens to be available (worse-comes-to-worse, bologna, hot dogs, polish sausage etc) -- pretty much clean the refrigerator.

For a really fluffy omelet, whip eggs and milk well. I like a cream cheese and chives filling or sauteed sliced mushrooms and shredded swiss cheese.
