EASY BREAKFAST CASSEROLE
1 lb. sausage, bacon or ham
3/4 c. sharp cheddar cheese
1/2 c. mushrooms & pieces
5 eggs
1 3/4 c. milk
6-8 slices of bread (cubed)
Place cubed bread in casserole dish, put cooked sausage, bacon or ham on top. Add sharp cheese, mushrooms on top of meat.
Beat eggs, milk, salt and pepper, pour over top.
Let stand 5 minutes then bake at 350 until brown (35 minutes).

French Toast Casserole
1 lb. Loaf Italian Bread
8 oz. Lowfat cream cheese
1/2 cup Sugar, divided
1/2 tsp. Vanilla essence
1/2 cup Chopped pecans, optional
4 Eggs
2 cups Milk
1 tsp. Cinnamon
2 tbs. Butter, melted
Cut bread into cubes, place half in greased 9x13" pan. Microwave the cream cheese to melt, stirring midway. Once melted, add half the sugar. Pour this mix over the bread cubes (will not completely cover). Sprinkle nuts over cream cheese layer. Top with remaining bread cubes. In a bowl, beat the remaining sugar, eggs, milk, cinnamon and melted butter together. Pour over bread cubes. Freeze at this point or let sit overnight in fridge. Bake at 350 degrees for 35 minutes. Serve with warm syrup or fruit toppings.

SUNSHINE TOAST! the old favourite, you take a piece of bread, cut a hole in the middle, it can be off any shape, but has to be in the centre and away from the edges, then take some sunflower oil, or olive oil, put it in a non-stick pan, fry the peice of bread for about 20 seconds, then you can either crack a egg into the middle and carry on frying the bread with the egg, or you can put some cheese, ham, or baked beans in the middle and carry on frying or even all of these things. i usually do the egg version though, and there you have it, SUNSHINE TOAST! it'll always put a smile on your face ;)
another recipe is Pakistani Choley and Paranthey, my mum makes this every sunday, it is soo delicous, althought it takes 30 mins to prepare so you will have to wake up early, its good for a sunday though, ok first to make the Paranthey, you add a tiny bit of water to some flour, and make it into a dough (same as when you make cakes), then you take a bit of the dough, shape it into a chappati (thin round shape) and put it on the pan, whilst your heating the chappati though, add some butter or margarine to chapparti and spread it out evenly, this will make the chappati into a parantha, very delicous, you will have to open a few windows though because when heating the parantha you will notice a lot of smoke this is normal, dont worry about it, after heating the parantha for around three minutes it should be a golden colour, now you can eat this with milk or tea, it is REALLY TASTY. my mouth waters just thinking about it, or you eat with some pickles, or with pakistani choley
how to make choley, this is a kind of curry, it make seem like it will take a long time to make, but trust me, after you've made it the first time it will take you 30mins to make it next time, ok here are the ingredients:
225 grams or 8 ounces of Chick Peas/Garbanzo Beans(washed)
½" piece of Fresh Root Ginger (peeled & grated)
1 large Potato (peeled & cut into 4 cm - 1 ½" dice)
1 tsp. of Ground Turmeric
½ tsp. Red Chilli Powder
2 fresh Green Chillies (slit lenghthwise into halves) (de-seeded for a mild flavor)
30 grams or 1 ounce of Clarified Butter
1 large Onion (finely chopped)
1 ¼ tsp. Salt
½ tsp. Garam Masala Powder
1 tsp. Fresh Mint (freshly chopped)
you can find these ingredients at home, although you may need to buy the Chick Peas, sorry you said a "simple" breakfast, but trust me this is sooo tasty, all it needs is around 20mins to make and you'll be happy for the rest of your day, ok now the method:
Soak the chick peas in plenty of cold water or use ready cooked - canned chick peas. Rinse several times and drain well.
Place the chick peas, water and ginger in a large saucepan over a high heat, bring to the boil, cover the pan and simmer for until the chick peas are tender.
Add the potato, cumin, turmeric, chilli powder and green chillies and mint, if you are using dried. Return to the boil, cover the pan and heat for a further 10 minutes, until the potatoes are tender.
Melt the butter over a medium heat and fry the oinion until they are lightly browned. Stir them into chick peas with salt and garam masala powder .
Remove the pan from the heat and stir in the lemon juice and fresh mint.
now you can have the Pakisani Choley with Paranthey! yey!
remember you can also make this at night aswell, but it taste's better in the morning.

Easy pancake recipe
1 egg
1/2 cup flour
1/2 cup milk
1 teaspoon baking powder
1 teaspoon oil
1 teaspoon vanilla
pinch of salt
half a cup of chocolate chips or blueberries optional
heat skillet over high heat and butter pan. Cook pancakes until the tops bubble.
will make about four medium pancakes. Serve with maple syrup or preserves.

Stuffed French toast
Cut a French bread loaf into 2 inch slices, then cut a pocket in each one. Stuff with any of the following:
ham, bacon, cheddar or swiss cheese, sausage crumbles, mushrooms, onions, green peppers.
Dip the stuffed slice in beaten egg, and fry on both sides like for french toast.
These are easy and delicious, but they look very impressive for guests, too. Kids love them!

French Toast Stuffed with Apples and Walnuts
Ingredients
3 oz. cream cheese
2 TBSP sugar
2 pinches cinnamon
2 TBSP butter
3 apples, preferably Granny Smith, peeled, cored and finely chopped
2 TBSP dried currants or raisins
2 TBSP orange juice
1/4 c. chopped toasted walnuts
4- 2" thick slices of soft white or wheat bread
1 egg
1/3 c. milk
1. Combine cream cheese, sugar and cinnamon in a food processor. Pulse a few times to blend.
2. In a skillet, melt 1 tablespoon of the butter and saute apples until they being to siften (about 5 minutes). Add the currants or raisins and orange juice. Cook until liquid evaporates.
3. Add the walnuts.
4. With a knife, make a pocket two thirds of the way into one bread slice, as wide as possible without cutting through the sides. Spread one quarter of the cream cheese mixture inside. Spoon in one quarter of the apple mixture. Repeat with other slices of bread.
5. Combine egg and milk in a bowl.
6. Melt butter in a skillet.
7. Dip stuffed bread in milk/egg mixture and fry.

How about a spin on French Toast. Instead of the usual sliced bread, how about some cinnamon raisin bread.
I recently was watching the Food TV network and they were using a cinnamon coffee cake for the bread in French toast. Really thick slices dipped in the egg/cinnamon mixture and then cooking as usual. Looked really good.

Breakfast Pizza. Get a pre-baked pizza crust top with pizza sauce and cheddar-jack cheese, scrambled eggs, cooked chopped bacon, crumbled sausage and diced peppers and onion. Top with more cheese and bake in the oven for about 10 minutes...just enough to melt the cheese.

In a toasted bread - put in one sunny side up egg - eat it with a cup of coffee then cold water when done. enjoy.
