Most applications also have a place for you to explain your conviction. You can say you don't have any felony convictions, but if a background check is done, they will find them and fire you. Period.
As for probation, check with your probation officer. S/he will know. Believe it or not, the purpose of the probation officer is to help you stay on the straight and narrow, not to try to catch you doing something wrong. If lying was a violation of the law, we'd all be locked up.

Answer to question one. It does not violate any criminal law to lie on a job application. Most employers do some kind of background check anymore. When they find out you either won't get hired for lying, or they will fire you.
Question two. Your PO won't like it, depends on the specific terms in your area if that would constitute a violation. Your PO is going to want to know where you are working and may check in on you there. When he/she does that your employer and your PO will know about the lie on the application won't they?

It would be against the law to do this on a Federal government employment application, but if you are applying to a private company, I think it would only be unethical. People lie on job applications all the time. Although if you are caught, they will terminate you (with cause).

It isn't against the law (unless you are applying for a government job), but usually employers will run local checks with their local pd's. It is a standard thing for them to do.
I am sorry about all that is going on with you being able to see your daughter. It breaks my heart to hear about that kind of stuff.
