There are 2 major families of alcoholic drinks: 1. Team fermented 2. Team distilled Fermentation is a natural process by which yeast consume sugars and starches in grain and fruit, and in so doing create 2 by-products, ethyl alcohol and CO2. Beer and wine are created this way. The "problem" with fermentation is getting the alcohol level above about 10%. At that concentration, the yeast begin to die. So how can we make 80 and even 100 proof spirits like whiskey and vodka? That requires a device called a still and a process called distillation. Because alcohol has a lower boiling point than water, you can heat a fermented solution (like beer or wine) and capture the steam. When you re-condense the steam, there is a higher percentage of alcohol in the distillate than what you started with. Do this a few times and you're making vodka. Infuse the vodka with juniper and you get gin. Put the vodka in charred oak for a few years and you'll end up with whiskey (more or less). Brandy is a mix of the 2 techniques. It is a fermented product that is either distilled to slightly higher alcohol percentage, or to which neutral spirits are added to in order to raise the percentage. They aren't as strong as spirits, but they're stronger than beer or wine. I don't know what tharra is, sorry.
