I would assume cat's vomit for the same reason human's vomit. It is a responce to a biological desire to remove whatever is in the esophagus from the body as quickly as possible, either because it impairs breathing or the body recognizes it as something that shouldn't be there.
Why cats tend to do so more often than humans can be a variety of reasons, from how close they are to the ground to, how they sleep, etc.

Because they clean themselves by licking, hair accumulates in their tummy and comes up as a hair ball, usually accompanied by some food/water. It's called hairballs.

you see, cats groom themselves alot. they lick their fur to keep it clean. but as they lick, loose hair comes out onto their rough tongue, and either if some of the fur gets caught in its throat and it gags, then it vomits to get it out of the throat, or the stomache cannot digest it, or what ever it ate.
if it ate soething bad, or its sick, it will vomit, just like us humans.
almost any animal can vomit...but theres many species that NEVER DO! but anything can, it all depends on what they ate, or whats inside of them, or if they choke on something, vomit comes and will clear out the object thats choking the animal. some animals u just rarely see it happen to...but some alot. it depends on: Health, Food, Gag, Choke, (or a poisen/really bad flavor)
