If you're working in the round, put 2 crochets in a stitch about 1/4 of the way and 2 crochets in a stitch about 3/4 way round.

You are increasing the total number of stitches but spacing out where the extra stitches are put so that the work doesn't look funny.

It means increase the next row by 2 single crochet stitches, evenly refers to where to add them meaning add one at beginning of row and one at the end.

EX: If you have 46 sc in 1 round, and your next round needs 48 sc, you divide 46 x 2, which equals 23. You will do 1 sc in each sc up to the 23rd sc. This is where you will add another sc. Continue around putting 1 sc in each sc until the 46th sc, where you will add the next sc. This will increase the sc evenly around the item. Hope this is easy to understand.
