Omega Man with Heston. A little dated but great. It is based on the book "I am Legend" and 28 Days Later is a rip off of it. Funny thing is that I am Legend is coming out starring Will Smith in a little while.

I would still say that the Mad Max trilogy is one of the great post-apocalyptic classics. That trilogy spawned a hundred rip-offs
