They are huge, man-made objects made of stone. The stone, while slowly weathering in the desert, is not weathering and eroding fast enough that they are gone after only thousands of years.

Why? There is no why. A pyramid has no motives.
How? Well, they are made of rocks, so they can take a beating. Erosion has been taking pieces and pieces away over thousands of years.
Did you know that the British soldiers used the Spinx's nose as target practice, and that's why it isn't there anymore? Of course, this was back in the 1800s, when most of Europe and Africa was ruled by England. It's pretty sad, though.
