I mean, is it usually done? Or, are these type of equations intended just for single and double displacement reactions?

Complete equations can always be written for these. Net ionic reactions are difficult, because the starting materials are covalent molecules, and the products are also. However, here goes:

Sb + I2 ===>Sb3+ + 3I-
Or is SbI3 a covalent compound
