A hen on a hot griddle would jump around because the griddle was hot. They used to have a danicing chicken show where the chickens would "dance" because the surface they were on was heated up.

It's an expression used to described someone who's hopping around excitedly, or moving very fast with no particular aim or direction. Similar to cat on a hot tin roof, but less sexual.
