All i remember is the last scene...this man and woman are running away from like zombies that can turn anyone they scratch or bite into one of them...so the man and the woman have managed to escape at the end...they jump in a jeep (it could possible be a motorcycle, but i'm almost sure it was a jeep)...they have almost escaped when all of the sudden the lady gets scratched by one of the zombies and soon she turns into one...and as soon as the does...the man immediately takes his sword and slices her head off...(even though he may have liked her)....

...you're talking about the pre-end-credit concluding scene from the 1985 Italian horror shocker, "Demons"...
...in the escaping jeep scene, the camera kept on zooming in on the guy, just to throw the audience off...and before anyone knew it, the girl whirls around in an angry and distorted demonic snarl. Although the guy DOES use a sword in the film, dispatching demonically possessed victims, while trying to escape from a haunting movie theatre, earlier in the film, the possessed girl in the jeep is blown away by a shotgun, rather than by a sword...
