American Chinese restaurants refuse to serve my favorite. I lived in Taiwan for a while and found an utterly hypnotic food called "xue li hong". It's made by salting fresh mustard greens, allowing them to wilt a bit and then dicing them. Generally, meat is cut into small pieces and fried with diced brown tofu, soy sauce, small red peppers and a sprinkling of sugar.
A good chef will pour this all into a bowl before pre-frying the salted mustard greens with a touch of soy sauce and sugar, then re-join them in the hot wok and fry a while longer.
It is absolutely the best taste experience a person can have!

Beef with broccoli with white rice or Sesame Chicken. It depends on what I am in the mood for. I also like Coconut Shrimp and Cheese Wontons.

Moo Goo Gai Pan combo... comes with fried rice and egg roll. And I always order a small won ton to go with it ..mmmmmmm.
