When eating a pizza or a hot pie, the crust may be only warm, but you may burn your mouth when eating the topping or filling. Why is this?

The filling of the pie and the topping of the pizza contain mostly water which has a very high specific heat. Specific heat is a measure of the ability of a substance to store heat. Substances with a high specific heat are slow to warm up and slow to cool down. The crust of a pie or pizza has a much lower specific heat than the topping/ filling and so is cooler.

The topping and filling retain heat better than the crust. Something to do with density.
