They'll show your previous employment, the history of where you've lived, and most convictions (including traffic or financial problems) you've had as well as if there is anything pending.
It is possible for some things not to show up like previous convictions, particularly if it was in another state and that state doesn't network computer systems with other states very well. I wouldn't count on it though, don't neglect to tell them something hoping it won't show up. It will look ten times worse if you don't tell them.
I have a misdemeanor "failure to appear" on a misdemeanor "entering a closed area" from when I was 19, it pretty much never shows up on checks but I always tell them anyway and it's never been a problem.

I used a website to check my own. Somebody here posted a response saying it's time to start "remembering". Well that's not the real issue here. Sometimes *mistakes* get put on people's records. I had an error on my credit report that I had to work to remove. And I had received a ticket but for some reason it never made it onto my driving record, so I was pleased about that!

You can always run a background check on yourself via www.Intelius.com $50 or
IntegraScan.com/Background-Check $20 or
if you've lived in CA all your life, you can make a trip up to you local police station/ sheriff's office and pay them to look you up $?.

You don't KNOW what will show up?
Have you forgotten where you worked and lived during your lifetime? Can you not remember if you have committed a crime? Do you or do you not know what your credit is like? It might be a good time to start remembering because ALL of those will be checked....and more.

Anything that is attached to your Social Security Number, Driver's License or ID will show up. If you have ever been given any kind of ticket or arrested, it will be there. Also if you have been behind on payments or slow paying, this will show up.
