The olfactory glands are more sensitive that your taste buds, largely because the molecules in the atmosphere are oxygen carried and chemically more active.
Whereas taste can be contaminated with personal bacteria in the mouth (Nothing personal) and taint the food slightly.
Bakers know all about this phenomena and deliberately include additives to the process to attract customers passing by.
Imagine walking along the sea front on a summers day with a slight breeze, then passing a fish and chip shop; the invitation is irresistable what?

To be honest baker's have gone the same way schools dinners did: hardly anything is fresh anymore, lots of the filling are bought already prepared and often overprocessed. It's all to save on cost, never mind the taste. I doubt that any small baker that sells any apple filled products has ever seen a proper apple. At best all they do is make bread and the different kind of pastries, a few cakes and thats about it. I remember a time when you could get a miriad of different breads and loaf, and so many different types of cakes and buns it was almost impossible to make up your mind.

Depending on the food, it always smells better than it tastes. Those bakeries purposely put out fresh strong smelling foods to lure in to buy something. It could be that the food they give you isn't as fresh as the display foods and that may be why they don't taste as good.

its the invisible aroma that leaks out the shop (even seeps through the glass) and hypnotises you to buy the product. Yup thats right, bakers are evil.

I know!!!! I've experince that myself. I think it has to do with a lot of bakerys use fans, plus I think our sense of smell is stronger than our sense of taste.
