I am trying to make soda bread, that is with white flour, wholemeal flour and baking powder. Mabye I am getting the preportions wrong but it never rises much and it is often not cooked in the centre resulting in me having to split it and re cook the uncooked halves up. Mabye I can make it with bread soda and cream of tartar. but I dont want to use buttermilk since I want it to be suitable for vegans. does it make any difference if i use soya margurine or olive oil or neither?

ok, you should check the expiry date on your baking powder, if it is past date then your baked goods will not rise very well. You can make vegan buttermilk by adding one tablespoon of white vinegar or lemon juice to a cup of soy milk to replace buttermilk

heh..just had to come back and edit now that the cat is not in my lap. I would use only bread flour for making bread- the difference is that bread flour is made from hard winter wheat and has a higher protein content than general all purpose flour. the higher the protein, the higher the gluten (the higher the gluten content then the less you have to knead)..the better your bread will rise. If you are using wholemeal- whole wheat flour then there is a product called vital wheat gluten to add so that heavier breads such as whole wheat and ryes, will rise. BUT since it mainly works with yeast breads then I am not sure how it will work for what you are asking...a soda bread.

If you don't follow the recipe for something, you're going to get something else.

Substitute ground pork for ground beef, and your recipe will perhaps be a bit greasier, but it will generally turn out OK.

You're eliminating most of the gluten in the recipe by using wholemeal flour. You are eliminating a leavening agent when you omit buttermilk. It's no wonder you're ending up with a baked mud puddle instead of bread.

Soya margarine has lots of trans fats in it, so be sure to use it in order to maximize heart attacks and cancer in the people who eat your bread.

i make bread with olive oil, just a spoon. maybe you put too much water or oven too hot...
