It's so awkward to tell a friend you like them or it can be awkward to ask mutual friends about them... so is there any way I can find out or test to see what a guy thinks of me?

Well the only for-sure way is to read their mind.
You can only go with your instincts. Talk about the right things, see how he responds to your body language, and you should be able to gauge it all much better...

Has he done something that made you think he likes you? Or do you like him and you're hoping he feels the same?
Give him some opportunity to be with you in a group, and see if he tries to talk to you. Or be friendly and start the conversation with him. You say you have mutual friends, so set up something where you and he and your friends can be together.

his (or her) body language will give them away every time --- watch them as they talk to you or as they look at you --- its unconconscious and a total giveaway if you know what to look for ---- if you are unsure find a good book on body language (Alan Pease) is one of the best authors --- best wishes

You can tell if they are giving you signs. Examine their body language towards you, eye contact, etc...
