I think they're possessive adjectives, but I'm not sure if they count as our, your (group/formal), and their. For example, would "Nos cousins ne sont pas tres sportifs" be correct, or would it be, "Nos cousins ne sommes pas tres sportifs."

Nos = our
Vos = your
Leur = their

The correct sentence would be : Nos cousins ne sont pas très sportifs.

You are right that they count as our, your and their. Be careful though. Other answerers did not mention that these possessive adjectives are ONLY for plural. Nos cousins (Our cousinS) as opposed to Notre cousin (Our cousin).

The possessives do not change the subject of the sentence - they merely identify the subject - in your example cousins, which is third person plural.
