BOURBON BANANA NUT BREAD
1/2 c. (125 ml) butter, at room temp.
1 c. (250 ml) sugar
2 eggs
2 c. (500 ml) all-purpose flour
1 tsp. (5 ml) baking powder
1/2 tsp. (2 ml) baking soda
1/2 tsp. (2 ml) salt
3 ripe bananas
1 tsp. (5 ml) vanilla extract
2 tbsp. (30 ml) brown sugar
Bourbon
The flavor of bourbon permeates the baked nut bread during chilling.
Preheat oven to 350 degrees F. (180 degrees C.). Grease a 9 1/4 x 5 1/4 x 2 3/4 inch (23x13x8 cm) loaf pan. Assemble blender. Put nuts into blender container. Cover and process 2 cycles at whip to chop nuts; set aside.
Assemble mixer. In large mixer bowl, put all remaining ingredients except 1/4 cup (50 ml) nuts, brown sugar and bourbon. Mix at low until flour is moistened then at medium until smooth. Pour into prepared pan.
Mix remaining nuts and brown sugar; sprinkle over top of loaf. Bake in preheated oven for 1 hour, or until toothpick inserted near center comes out clean. Remove from pan; cool completely. Saturate a 15x9 inch (38x23 cm) double thick piece of cheesecloth with bourbon and wrap around loaf.
DOUBLE CHOCOLATE ZUCCHINI BREAD
2 sm. zucchini (about 1/2 lb. total) or 2 c. grated
4 c. flour
1/2 c. cocoa
1 1/2 c. sugar
1 tsp. baking soda
1/2 tsp. baking powder
3/4 tsp. salt
1 tsp. cinnamon
1/2 tsp. nutmeg
1 1/2 c. oil
3 eggs
1 1/2 c. milk
2 tsp. vanilla
1 c. semi-sweet chocolate chips
Heat oven to 350 degrees. Butter 2 (8 x 4) loaf pans.
Grate zucchini. In a large bowl, combine flour, cocoa, sugar, baking soda and powder, salt, cinnamon, and nutmeg. In another bowl, combine zucchini except the chocolate chips. Stir into dry ingredients until just blended. Stir in chocolate chips.
Pour batter into prepared pans. Bake until a toothpick stuck in the center of the bread comes out clean, about 1 hour 15 minutes. Cool on rack 10 minutes, then remove from pans and cool completely.

If you want an advice from and older person, go to the store, pick up the Betty Crocker or other box of Nut Bread. Then buy two bananas for the nut bread and a pack of pecans.
When you go to make the nut bread, put in as many broken pecans as you want, and but banana in small pieces.
AND add about 1/4 extra cup of cooking oil to make it moist.
Bake for the same time. It will taste totally homemade, not a box mix. You can also use other nuts instead if you want.
Box of nut bread is under $2 and well worth it. Enjoy.
You can google zucchini loaf recipe and it will have lots of choices. I haven't made zucchini bread, but have tried it and it is quite good.
You could use the nut bread box mix and add one zucchini, and 1/4 cup cooking oil to the mix. The extra oil makes it very very moist. Do not overbake it either.

Banana Loaf
INGREDIENTS
* 1/2 cup butter
* 1 cup white sugar
* 2 eggs
* 3 ripe bananas, mashed
* 2 cups all-purpose flour
* 1 teaspoon baking soda
* 1 teaspoon baking powder
* 1/2 teaspoon salt
* 1/2 cup chopped walnuts
DIRECTIONS
1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5 inch loaf pan.
2. In a large bowl, cream together the butter and sugar until light and fluffy. Stir in the eggs one at a time, beating well with each addition, stir in the mashed bananas.
3. In a large bowl, sift together flour, baking powder, baking soda, salt. Blend the banana mixture into the flour mixture; stirring just to combine. Fold in the nuts.
4. Bake in preheated oven for 60 minutes, until a toothpick inserted into center of the loaf comes out clean.
Zucchini Loaf
* 2 eggs
* ½ cup cooking oil
* 1 cup sugar
* 1 cup grated zucchini, unpeeled
* 1 tsp vanilla
* 2 cups flour
* 1 tsp baking powder
* 1 tsp baking soda
* ½ tsp salt
* 1 tsp cinnamon
Beat eggs until frothy. Beat in cooking oil and sugar. Add zucchini. Stir in vanilla.
Combine remaining 5 ingredients in separate bowl. Stir well and pour into zucchini mixture. Stir just to moisten. Pour into greased loaf pan. Bake for 50 - 60 minutes in a 350 º oven. Let stand 10 minutes. Remove from pan and cool on cake rack.

Pre-heat oven to 350 degrees, and grease 2 loaf pans.
Mix eggs, oil and sugar and beat until creamy.
Add the rest of the ingredients and mix well.
Bake for 60-70 minutes in two loaf pans.

100g softened unsalted butter
140g light muscovado sugar
2 large eggs
3 large ripe bananas, mashed (about 450g/1lb total weight)
50g pecans, roughly chopped
50g raisins
150ml buttermilk
280g plain flour
1 tsp bicarbonate of soda
50g icing sugar
Preheat the oven to fan 160C/ conventional 180C/gas 4. Butter a 20 x 13cm loaf tin and line the base with greaseproof paper.
In a large bowl, whisk together the butter and sugar with an electric whisk until creamy. Beat in the eggs one at a time (don't worry that the mixture looks curdled). Stir in the mashed bananas, pecans, raisins and buttermilk.
Sift the flour and bicarbonate of soda on top of the banana mixture, then fold in until evenly mixed, taking care not to overmix. Spoon into the prepared tin and level the top.
Bake for 1 hour 15 minutes until a skewer pushed in the centre comes out almost, but not quite, dry. Remove from the oven and leave for about 10 minutes, then turn it out of the tin on to a cooling rack to cool.
For the icing, mix the icing sugar with 2-3 tsp cold water to give a smooth, runny consistency. Using a dessertspoon, drizzle the icing in lines across the loaf

The best banana loaf recipe I have come across is at http://www.bananaloafrecipe.co.uk. It is very easy to bake and simple to prepare, with no need for a mixer or a food processor. It is deliciously moist too!
