Do you mean the saint's career or his profession of faith? Usually the work that a saint performed in life has an effect on his likelihood to become the patron saint of that craft. All that does is give one a name to invoke when praying for intercession with God on that subject.

A profession of faith is simply a solemn statement of what one believes.
