Another great bake sale item is mini cheesecakes. They are very very easy to make and go into a paper cupcake holder. These go like hotcakes!!

Here's a recipe for you:

CHEESECAKE TARTS

2" foil cups (21) - so this recipe makes 21 of them
2 (8 oz) pkgs cream cheese - softened
2 eggs
3/4 c sugar
1 T lemon juice
1 tsp vanilla
1 box Keeblers Vanilla Wafers
1 (20 oz) can cherry pie filling

Mix all except the wafers and pie filling and beat 5 minutes. Arrange cups on a cookie sheet (or in a muffin pan). Put 1 vanilla wafer in the bottom of each cup and fill 3/4 full. Bake in a preheated 375º oven for 15 minutes. Cool. Just before setting out at the bake sale, spoon about 3 cherries with a little of the sauce over each). These can be made ahead of time and frozen also - they work great.

My daughter-in-law had a bake sale at her military base and when the fellows came back from being "in the field", they really hit the cheesecakes!

When I was in school, there was always someone selling baggies full of popcorn and they ALWAYS sold out. Talk about fast and easy.

But that was before the days of microwave popcorn really took hold so maybe the stuff was a bit more of a novelty then. Then again, people do like their popcorn - especially when it's right in front of them in such a convenient form. :)
