I got 2 gallons of persimmons and want to make cookies. I have the recipes but dont know how to get them ready. How do you clean them.

I take the persimmons, wash them off, remove the seeds and scoop out the pulp. If they aren't soft, I put the pulp in my blender and puree them. By the fact that you have so many persimmons, I would do the above, and put a recipe's worth in a zip-lock bag and stick in the freezer all that you aren't using for your cookies today. Then you can haul them out as you want to make more cookies.

The recipes for persimmon cookies I've seen use them pureed. You don't need to peel them first if you do that but I like to. A blender is ideal for preparing persimmon puree for use in baking. However, cut out any defects and slice off the blackened portion of any peel and remove the seeds before putting them in your blender.

Wash persimmons just like you'd wash a pear or apple. I like to use fruit wash & rinse them in a large bowl of cold water. Then I rinse them again under cool running water.

If the persimmons are the soft kind, just be extra gentle & take care not to break the skin.

They should be peeled before use. Also, make sure to remove all the seeds. The seeds are not edible. Then proceed with their needs for your cookies.
