Not sure why you want to substitute for chocolate. If it's not an allergy and you don't have chocolate (like unsweetened baking chocolate), then you can use unsweetened cocoa plus some oil as a replacement (3 T cocoa + 1 T butter = 1 square of chocolate). If you aren't using chocolate because of the fat content, then unsweetened cocoa powder works without the fat. If you are allergic to chocolate, then the carob is the only thing I can think of.

Carob unless you're a chocolate junky then it won't really do anything for you but incase you have pets and drop it on the floor it's safe for them to eat, or you could try white chocolate which isn't really chocolate.

It depends what you want to do with it.
I agree that chocolate is chocolate.
Some people might say "carob". I love carob too, but it's not the same.
If it's for some sort of dessert recipe, you might want to just completely change the flavour to something else.

Really dark pure chocolate!
Its got more of the good stuff in it, but is pretty bitter so you don't want to eat as much... and even if you do, less cals!
Some people say its disgusting but if you suck and nibble it instead of chomping it then its really nice! mmmmmm

There isn't one. If the recipe calls for chocolate, use chocolate. If for some strange reason you don't want to use chocolate, which is inexplicable to me as let's face it it isn't as harmful as a lot of other things, then don't try to make that recipe. It's simple, really.
Carob is disgusting, and will make you feel both ill and angry that you wasted your money on such rubbish, in case you were thinking of using it.
