SInce it's a thin pan, I would use just one mix, and bake at 375 for 25-30 minutes. Use a toothpick to be sure it's done. I have a recipe that I think uses a thin pan, and that's what it says to do.

I'd use 2 cake mixes. Generally 1 cake mix in a 9x13 makes a low cake and since yours is 13x17, I'd definitely use 2. Most pans are two inches deep. That 1" deep pan has me curious - why such a shallow pan? It's twice as high as a cookie sheet. Generally the cake won't ooze over the edges - it will just get taller unless there is just too much in the pan.

You might find that 1 1/2 cake mixes is better - now that I think about it. Play it by ear. If you have leftover cake mix, put the left over part in a small cake pan and bake it that way. Then freeze it to make a Trifle with later.

It almost sounds like you are using a cookie sheet. Are you planning on making a roll? There are some wonderful rolls out there (where you roll up the cake with filling in it). I like to take German Chocolate Cake and bake it in the edged cookie sheet, spread the German Chocolate frosting on it and roll it up. I stick it in the freezer and cut off a slice as I have the urge!!

OK - in seeing the other answers, you are using a jellyroll pan. Make sure you are using a recipe for a roll if this is your first time or it will break on you. Mine break because I use regular cake mixes or cake recipes but by wrapping them in saran and freezing them and then cutting them, no one is the wiser that it broke while trying to roll it.

And since it is a jellyroll pan and you are probably making a roll, only use 1 mix. Don't cook it longer than 15 minutes or it will be too dry to roll.

That pan is a jelly roll pan. One cake mix will work, since that size is twice that of a 13x9" pan, so the cake should be half as thick as it would be if cooked in the smaller pan. One inch deep is pretty shallow!

You will have to watch carefully when baking it. It will probably be done is slightly over half the baking time as it would take in the 13x9" pan.

I would probably lower the oven temp by 25º and plan to start checking it at half the time of a regular pan cake.

Without lowering the temp, I think the corners, which are the thinnest would be over-baked and dry.

2 cake mixes will be enough.u can bake it for15 mins but keep checking after 10 mins weather it is done or not.
