Do it the South Carolina way. Toss shredded cabbage with a generous amount of white wine vinegar, a spoonful of sugar (which should really be dissolved in the vinegar) and a sprinkling of crumbled dried chilli. Nothing else.
This is a coleslaw which will strip the skin from the roof of your mouth, very different from the icky goopy mayonnaise-y stuff you get in shops. But it's authentic. Serve with barbecued pork that's been slow-smoked for hours and served, shredded, on a white bun. The sharp coleslaw cuts the sweet pork in a very enticing way. If you can't be bothered to slow-smoke pork (and neither can I, frankly) then it would be very good with roasted pork belly that's been chopped and also served on a bun. This coleslaw goes great with hot pork, basically, and not much else.

You might think this is crazy, but try broccoli slaw. It's in most supermarkets now in a bag. You really can't tell it's broccoli. But even the traditional way... here's how I make my cole slaw:
shredded cabbage (or broccoli slaw)
grated carrots (even if it's already in the mix)
1 sm. to med. grated onion (depending on how big a batch you're making)
2 tblsp cider vinegar
mayonnaise
a little milk (about 2 tbls. give or take)
1/2 tsp. sugar
dash of salt
here's the kicker that makes it: celery seed. I'm not sure how much, but several shakes from the shaker.
If you've never used celery seed, don't be leary... it's a wonderful flavor in cole slaw.
Put all ingredients except the mayo in a bowl. Now add the mayo a little at a time and mix with a large fork until desired consistency. Cover and refrigerate before serving.

Poppy Seed Honey Dressing:
1/4 cup cider vinegar
1 cup mayonnaise
1/3 cup poppy seeds
1/3 cup honey
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
1 medium cabbage, cored, finely shredded
2 large carrots, peeled, julienne
1 bunch scallions, thinly sliced
1/2 cup finely minced parsley leaves, optional
4 Fuji apples, peeled, cored, julienne
Prepare the Poppy Seed Dressing. In a medium bowl, combine all the ingredients together until well blended. Set aside.
Prepare the salad. In a large bowl, combine the cabbage, carrots, scallions, parsley, and apples. Pour in the reserved dressing and toss until well blended. Refrigerate at least 1 hour before serving, mixing the salad at least once to evenly distribute the dressing.

Dry roasted peanuts (check for allergies though)
Raisins (optional)
Apples (optional)
Dressing:-
Ratio of 2 tablespoons Mayo to 1 tablespoon Salad Cream.
Salt and Pepper to taste.
A bit of garlic powder to taste
You can adjust these ratios to suit your taste, but this is like shop bought coleslaw at a fraction of the cost.

I mix up 2 T. red wine vinegar, 2 T. sugar, 2 T milk and stir into about a cup or so of mayo, before adding to the shredded cabbage and carrots.

I follow my mom's recipe & it is wonderful!!
Take 1 small head of cabbage, remove outer leaves, rinse, then finely chop & place in large mixing bowl. Add 1 small onion diced, 1 bell pepper small/medium chopped, 2 grated carrots, a sprinkle of garlic powder & 1 jar of the slaw dressing in the produce section......It starts with a "T" & has a blue lid....Mix together well & chill for at least 2 hours before serving.......Yummy!

White cabbage shredded very fine
Spring onions chopped
Ordinary onion chopped finely
A little Red and green pepper chopped up fine
Carrotts shredded
Mix together with salad cream or mayo, black pepper and vinegar. The vinegar should make it taste tangy.

yes i can. add 1/2 can of drained diced pineapples. it is so good but not sweet. every one ask me what i put in my coleslaw to make it so good. you cant really tell the pineapples are in there they just give it a really good taste. p.s. be sure to dice pineapple very small. hope this helps.

OK, here is my recipe:
half of a big cabbage cut small and thin
1 cup of pineapple (without juice) cut in little pieces
1 1/2 cups of small marshmallows (it is better if they are in different colors)
1 cup of dry raisins
1 cup of pecans
3 table spoons of mayonnaise
Mix all the ingredients and enjoy!!

Confetti Slaw
¼ small head green cabbage cut in thin strips (about 2 cups)
2 carrots, peeled and grated ( about 1 cup)
¼ cup raisins
¼ cup peanuts
½ cup yogurt, vanilla
1 Tablespoon orange juice
Combine cabbage, carrots, raisins and peanuts in mixing bowl. In small bowl, stir together yogurt and orange juice. Before serving, add yogurt mixture to cabbage and combine thoroughly.
