i sometimes will used the left over fried chicken to make a quesidilla...have 2 tortilla wrap, cut chicken into thin pieces, put cheese on one wrap then the chicken that was cut then put the 2nd tortilla wrap on top..microvawe then eat..yummmmmy! (sometimes I put those jalepenos coz I like it spicy)

When I have a lot of fried chicken left over, I peel it off the bones into bite-sized "shreds" and put it in zip lock bags and freeze it for later use. That way it doesn't go bad and I can use it for hot dishes, salads, soups, etc.
The salad I like best made with the chicken shreds is a bed of salad fixings (lettuce, radishes, celery, carrots), top with (now this is per serving so you put the salad fixings in a bowl you will use to serve an indivudual). Anyway, top with half an apple, cored and chunked - don't peel unless you want to. Sprinkle some cranraisins on top, then put your chicken on top of that. Put some toasted walnuts or pecans (halves) on top of that, toasted sunflower seeds on top of that, toasted pine nuts on top of that and some crumbled Feta cheese on top. Serve with a custard dish of Raspberry Vinaigrette (so they can put on however much they want. I had this in a snazzy restaurant (they charged something like $12 for the salad alone!!). Very good. I've been making it ever since.
You can put the chicken in at the end of making a soup - all you'll have to do is heat the chicken since it's already cooked.
I received a nice recipe for a Chicken Enchilada Casserole that has a white cream sauce with it instead of the green or red sauce. I use my leftover chicken in that.
My granddaughters love chicken sandwiches. One loves it just as pieces on bread with a little mayo, mustard, lettuce and a slice of tomato. The other likes it chopped up with onions, pecans, cranraisins and mayo with a little curry added on the bread.

CHICKEN PIE
1 (2 1/2 - 3 lb.) chicken, cooked and boned (great way to use leftovers from whole, baked chicken)
1 can celery soup (cream of mushroom, cream of chicken, or whatever you want to use)
1 can peas and carrots (drained) (I used a bag of frozen green beans, peas, carrots and corn. Use whatever vegetables you want.)
Salt and pepper to taste
3/4 stick butter
1 c. chicken broth (or chicken bouillon mixed with water)
1 1/2 c. Bisquick
1 1/2 c. milk
Grease a large (fairly deep, not shallow) casserole dish with part of the butter. Put boned chicken in bottom of dish.
Mix soup with chicken broth and spread over chicken. Sprinkle drained vegetables over the soup.
Cut butter into small pieces and dot casserole.
Mix Bisquick and milk together; pour on top. Bake at 350 degrees for one hour. Serves 6 to 8 people.

Chicken Salad!
3/4 lb (2-3 cups) of cooked chicken meat, skin on, coarsely chopped
2 stalks celery, chopped
1/2 red bell pepper, seeded and chopped
4-6 green olives, pitted and minced
1/4 cup of chopped red onion
1/2 to a whole apple, cored and chopped
1/3 head of iceberg head lettuce, sliced and chopped
5 Tbsp mayonnaise
1 Tbsp plum preserves, or any sweet berry preserve (or a lesser amount of honey)
2 teaspoons fresh squeezed lemon juice
Salt and pepper to taste
1 Prepare all of the salad ingredients and combine them in a large bowl.
2 Prepare the dressing separately. Combine the mayonnaise, preserves, and lemon juice. Taste for proper balance. The dressing should not be too sweet nor too sour. Adjust the ingredients until you have achieved the balance you want. Add salt and pepper to taste.
3 Mix the dressing in with the salad ingredients. Salt and pepper to taste.
Serves four.

Fried Chicken Italienne
Left over deboned fried chicken, cutlets, chicken breasts or chicken fingers
Italian herbs
Crushed garlic
Home made spaghetti sauce or bottled sauce
Shredded mozzarella cheese
1/2 cup cooked linguini pasta per person
Spray with Pam a casserole large enough to hold the chicken in one layer,. Ladle sauce to cover bottom of baking dish, place chicken in a single layer, over sauce. Sprinkle lightly with garlic and Italian herbs. Cover with remaining sauce. Cover with Mozzarella cheese. Bake in a preheated oven at 325 degrees for 30-40 minutes--or until meat and sauce are warmed completely through and cheese is melted. Be careful not to over bake.
Serve over warm pasta.

I'd eat all 6 pieces cold, when I got home from work, but if you wanna get crafty, why not peel the meat off fhe bone, shred it up a little, throw it in a skillit with 2 packets of goya sazon seasoning, just heat it up, make tacos with the meat.
You can make enchaladas also, just lay tortilla on frying pan, get hot, top with chicken, mexican cheese, and some chunky slasa, cover and flip over to heat the other tortilla. Mmm

I think that a chicken pot pie or a chicken casserole works great for left over fried chicken. I noticed that someone else recommended chicken pot pie (or chicken pie) but I will list recommended recipes for both. Hope you enjoy!
Chicken Pot Pie
(this recipe has had RAVE reviews and everyone absolutely loves it. However, it may take just a bit more work than your average pot pie recipe but I promise you won't be disappointed!)
1cup potatoes, diced
1 cup chopped onions
1 cup celery, diced
1 cup chopped carrots
1/3 cup melted margarine
1/2 cup all-purpose flour
2 cups chicken broth
1 cup half-and-half
1 teaspoon salt
1/4 teaspoon pepper
4 cups chopped cooked chicken
2 pie crusts (either store bought or your own recipe)
1. Preheat oven to 400°F.
2. Saute onion, celery, carrots and potatoes in butter for 10 minutes.
3. Add flour to sauteed mixture, stirring well Cook one minute stirring constantly.
4. Combine broth and half and half
5. Gradually stir into vegetable mixture
6. Cook over medium heat stirring constantly until thickened and bubbly
7. Stir in salt and pepper; add chicken and stir well
8. Pour into shallow 2 quart casserole dish and top with pie shells
9. Cut slits to allow steam to escape.
10. Bake for 40-50 minutes or until pastry is golden brown and filling is bubbly and cooked through.
Chicken Casserole
2 lbs boneless skinless chicken breasts (your fried chicken would work great here)
1 medium onion, sliced in rings
1 1/2 teaspoons tarragon
1/4 teaspoon poultry seasoning
1/4 teaspoon salt
1/4 teaspoon pepper
1 (10 1/2 ounce) can cream of chicken soup
1/4 cup milk
1/4 cup slivered almonds (optional) (you can also use crumbled ritz crackers or bread crumbs)
1. In 13 X 9 inch baking pan, place chicken pieces.
2. Do not overlap.
3. Place onion rings over top.
4. Mix seasonings with cream of chicken soup and milk and spoon over chicken.
5. Bake, uncovered, in 375 degree oven for 40 minutes.
6. Sprinkle chicken with almonds, if desired. (I prefer to use crumbled ritz crackers or bread crumbs)
7. Bake 10 minutes more or until chicken is tender.

Chunky chicken salad. That's what I'm doing for dinner tonight. Pull meat off bones, cut up and toss with minced onion, celery, mayo., salt, pepper and as an option, curry powder. Serve on chopped lettuce, pickles and olives on the side.
