Being a former chef and wanting to discuss culinary trends over the years;

1. Auguste Escoffier, the King of Chefs

2.Julia Child, For her wit and charm

3. Antoine Careme, to here the old pre-modern ways of cuisine and food styling.

For the professional chef and culinary scholar I am, these 3 people are in my mind the people who moderized, changed and made cuisine what it is today, hands down
