Quick & Easy Peanut Butter Cookies
makes about 36

1 C Sugar
1 C peanut butter
1 slightly beaten egg

Mix together well.
Let sit 5 min.

Roll into 1" balls and place on cookie sheet. Usually all will fit on one sheet since they don't spread very much. Flatten with a fork, making a criss cross design.

Bake 350º, 10-12 min

NOTE - since these don't have any flour, they taste like a cross between a cookie and a candy.

Chocolate Delight

A popular chocolate layered dessert with pudding, a graham cracker crust, sweetened cream cheese, and whipped topping.

INGREDIENTS:
1 package graham cracker crust mix
8 ounces cream cheese, softened
1 cup confectioners' sugar
1 cup non-dairy whipped topping
1 package vanilla instant pudding
1 package chocolate instant pudding
3 cups milk

PREPARATION:
Make crust according to package directions and press into the bottom of a 9 x 13 x 2-inch pan. Bake at 350 degrees just a few minutes. Mix cream cheese, sugar and whipped topping and pour over crust.

Mix puddings and milk and pour over cheese layer. Dot with additional whipped topping. Chill.

Cinnamon Delights

1 loaf fresh white sandwich bread
1 ounce package cream cheese, softened
1/4 cup sugar
1 egg yolk
1 teaspoon vanilla
1/8 lb margarine, melted
1 teaspoon cinnamon with cup sugar

Trim crust from bread. With roiling pin, flatten bread thin. Set aside and make the cream cheese mixture. Cream the cheese, vanilla, egg yolk and sugar. Spread mixture on bread and roll up. Using basting brush, brush melted margarine on each roll, then roll in the cinnamon and sugar mixture. Bake on greased cookie sheet for 15 minutes at 350F. Can be made ahead and frozen. Allow to thaw before baking.

***********TWINKIE PUDDING DESSERT
1 box Twinkies
1 box vanilla pudding
1 cup milk
1 can cherry pie filling
1 large cool whip
Cut Twinkies in half, layer in bottom of pan. Mix pudding according to directions. Pour over twinkies. Add cherry pie filling and finish with cool whip.
Refrigerate before serving. Great for kids to make!

I use this for a dessert, very quick and easy.

Orange Salad

1 small can madarin oranges (drained)
1 small can crushed pineapples (drained)
8 oz cool whip
1 small box orange jello
12 oz small curd cottage cheese
10 oz bag mini marshmallows

Combine jello and cool whip. Stir well. Add remaining ingredients and refrigerate for a few hours.

150g plain sweet biscuits, crushed
75g butter, melted
2 tablespoons brown sugar
1/4 teaspoon cinnamon
250g cottage cheese (light is fine - or use cream cheese for a richer cheesecake recipe)
375ml sweetened condensed milk (light is fine)
½ cup lemon juice
1 teaspoon vanilla essence

Mix biscuit crumbs with melted butter.
Add brown sugar and cinnamon to biscuit crumb mixture.
Press biscuit mixture into the bottom and up the sides of a 22cm/ 9in springform pan.
Refrigerate while you prepare the cheesecake filling.
Beat cottage cheese (or cream cheese) with the condensed milk until there are no cottage cheese (or cream cheese) lumps left.
Add vanilla.
Add lemon juice. (You will need to work very quickly after adding the lemon juice as the acidity in the lemon begins to set the mixture.)
Pour mixture into biscuit crumb base.
Place cheesecake into refrigerator to set (approximately 4 hours).

chewy chips ahoy cookies
whipped cream

Spoon a glop of whipped cream on a cookie then sandwich it with another cookie. Make as many as you want and then put in freezer until ready to serve.

Also can roll in sprinkles or baby m&ms or chocolate chips or whatever before you put in the freezer. yummeee!!!

I call this twinkie delight: 1 box of twinkies, slice in half lengthwise. one 8oz. cont coolwhip, one cont. frozen strawberries or blueberries(thawed). one can sweetened condensed milk, one box vanilla instant pudding mix, one strawberry or blueberry glaze(which ever one you are using)

mix the milk in the pudding with a whisk. put a layer of sliced twinkies in bottom of oblong baking dish , place pudding mixture on top, then mix berries and glaze together and put on top,then top with cool whip, enjoy

Line a bowl with vanilla wafers and sliced bananas, fill with sliced bananas mixed with vanilla pudding and top with the remaining wafers and banana slices.

Fruit Smoothie

Blend Together:
1 cup of ice
1 cup of yogurt, any fruit flavor or plain
1 cup of fruit, frozen or fresh
Add milk for a creamier smoothie

You can makes several different combinations. I love using peach yogurt and frozen strawberries! Yum!

cheesecake its take about ten min to make you need two packs of cream chesse and two eggs and a cup of sugar tablespoon of vanilla and blend it all together and the pour it in a graham cracker crust and let it sit for about a hour and its good
