I've been a grill cook for a long time, and the sirloins or filets, rib eyes cooked on the grill were rarely marinated, just seasoned really well, and usually put a cover over them on the grill gets them to taste more smokey. Dont mess around with the steak much while cooking, because it may take on the flavour of the gas. Thats all i can think of, make a nice brown sauce separately for the steak, or eat it plain with, a steak sauce such at A1

Here's something I read the other day that I would have never thought of. It said that most people rinse off their meat before grilling. If you don't dry the meat then it doesn't grill right. I don't remember how it worded it but it kind of like boils the outside of the meat because of the moisture. So, dry your meat before you grill it. Something else you can try is getting flavored chips to put in your grill. Most gas grills don't cause a grilled flavor. Season your meat with seasoned meat tenderizer or seasoned salt or some other dry rub instead of marinating. Good luck. It is hard to cook a good steak at home.

Restaurants cook with butter, lots of butter, sometimes with garlic butter. Not the healthiest answer, but if you use butter with your grilling and montreal seasoning, an expensive sirloin, you'll be in business. Also after cooking let the steak sit and breath before serving. Good luck, and in my opinion nothing beats a Weber Charcoil Grill. The carnivores need to stick together!

Everytime my family makes steaks it taste better than any steakhouse. We use salt, pepper, and cavenders...the best ingredient! You cook it on the grill for about 7 minutes each side, but it also depends on how big they are or the thickness.
Good luck and go and buy some cavenders!

Maybe you're trying to be too fancy? Too many maybe's here. But maybe you just need to get a method and practice.
Start with just your basic, choice ribeye steak, season just by rubbing with olive oil, salt and pepper.
Let steak come to room temperature before you put on grill.
The grill should be very hot and the steak needs to be cooked fast. I like mine rare-ish so i cook it just about 3 minutes per side, only turning once.
If you still can't get it like you want it, forget it and go to the restaurant you like! Life is short!

if you have a broiler on your stove try cooking your steak in there and stay away from putting to much on it. the steak is what you want to taste not all the stuff you put on it. a little pepper and garlic. turn your broiler on and let it heat up then put your steak in no longer then 3 mins on each side. turn only once. good luck

Supermarket steaks (even the best cuts) are not the same as restaurant steaks. the govt rates like USDA prime - USDA choice etc. Unless you have a friendly butcher that will get it for you, you cannot get the same quality beef that the restaurants do.

I think you should ask this exact same question to the cook at the steakhouse. He will probably feel flattered, and he might not tell you the secret... but maybe he will!!!
