Cooked is ok, of course, but I much prefer them raw, on ice, with a squirt of lemon juice. People say you should swallow them whole, without chewing. I don't think that's right. What I do is hold them in my mouth a moment or two. They practically dissolve, and release all their flavour over your tongue.
They taste like sea...

I've never had oysters cooked before, but I would imagine it kind of defeats the point. Surely a cooked oyster becomes too similar to a mussel? Raw is yummiest with finely chopped shallots and red wine vinegar

I think oysters taste a bit fishy when cooked. The only dish I've enjoyed them cooked in was a creamy cajun soup. Otherwise I prefer them raw, with red wine vinegar.

we have an oyster dinner every February at our gun club when it is time for elections. i think last year we went through 50 gallons of oysters. they are served raw, fried, baked and in other homemade dishes. i pretty much tried everything but my favorite was baked. for me, raw was a little too slimy compared to clams and mussels.
