No place beats HK for shopping. You might be able to find cheaper and better, but overall IT is the place to go for a shopping overdose...
For cheap knock-off, the street markets are the best, but you have to bargain. In Kowloon check the Ladies Market, the Temple Street Night Market, the Bird Market on Yuen Po Street, the Flower Market on Flower Market Road, the Jade Market in Yau Ma Tai; of course, just walking down Nathan Road is an experience in itself...then on HK Island, the Stanley Market. Cat Street Bazaar in Western District has antiques, vintage watches, coins and stone carvings.
Sham Shui Po has whatever electronic and computer gadgets you want. For shopping malls, check Festival Walk in Kowloon Tong, Langham Place off Nathan, Pacific Place in Admiralty is a famous shopping mall for name-brand clothing, jewelry, accessories, etc.
I personally love to hang out on Li Yuen Street East and Li Yuen Street West between Queen's Road Central and Des Voeux Road Central, and the bonus is the ambiance of the vegetable, fruit, meat, fish stalls around that area. I also like to check SOGO and Seibu to see what our trendy Japanese have to offer these days in terms of fashion, design, etc.
As for bars, I personnally can't stand the busy bar scenes at Lan Kwai Fong or Wanchai...I'd rather hang out out on the street, but that's me...

Mongkok Ladies Market is a good place. As for bars and clubs, Wan Chai is a good place for bars.
