Luckily for your son the Tudors ate quite well, lots of meat and big banquets as well as the arrival of new foods from the newly discovered americas such as Potatos, turkeys and Chocolate.
So basically just fill his lunch box with some nice big bits of meat, maybe some potatos (i would cook them first) and maybe even a bit of chocloate

One major point of tudor meals was that often the plates were made of bread, this bread was then thrown to the servants.
Also remember forks were not used and eating with fingers was common.
But as Tudor times was English then the food of the rich was basically english game.
Duck, Pheasent, Deer, Swan, Boar etc. and veg was what was found in England around that time, remember Potaoe was discovered by Elizebeth 1st so can be classed as late Tudor.
Fish was popular, Carp and Salmon were all around, and infact it was a law for a time that you could not server your apprentice Salmon too often, it was that common.
Cows, Pigs and Sheep were also being reared and remember they ate most of the animal :)

Pie. Easy. Any kind of pie will do- but pork-pie or minced beef is fine.
And historically accurate- the Tudors and pre-renaissance English mastered pie-making as a means of preserving food prior to refigeration.
