By exercise bikes I'm thinking your meaning stationary bikes.
They work the butt, quadriceps (front of the thigh), hamstrings (back of the thigh), calves, shins and of course the heart.
The recumbent bike (where your legs are in front of you) will work the butt more, and the regular bike (legs directly under you) will work the thighs more.
If you use the clips to hold your feet in, the you'll also work the front part of the hips and parts of the stomach.
Keep in mind if your cadence (revolutions per minute) is slow (under 60 rpm), you'll work the leg muscles harder and you'll fatigue quickly. Beginners usually keep it at 60-80 rpms and more advanced cyclists at 80-100 rpms. Have fun!

Depends on the type: Stationary with stationary handle bars your legs and stomach:
The ones with handle bars that give you a rowing motion also work you arms back and chest.
The recumbent ones works your hand to mouth muscles mainly not very good.

Cycling does not do so much to construct muscle. Cycling is extra of a aerobic activity. Try lifting weights if you're looking to bulk up. It will take you many years on a bicycle...
