you could do mini kebabs - dice the turkey and marinade it with something spicey/garlicky and yogurt to tenderise it, then fry it.
alternate it with sunblush toms, mozzerlla, roasted peppers, halloumi, feta, even olives - anything like that depending on what your mum likes.
They'll be fine served warm or cold, and you could add a dip depending on your ingredients - you might want a sour cream dip, or a sweet chilli one, for example.

how about turkey stroganoff,used a buttom mushroom
