Roasted with a little garlic and fresh herbs like thyme. A proper jacket potato is nice too with loads of butter and melting cheese. Like daulphinoise potatoes which is actually really easy to make. Par boil the potatoes, slice them thinly first, put in a dish and top with cream and grated cheese then bake in the oven till the cheese has mettled and the cream has reduced, think its for about 15-20 mins on 200.

I made Bombay potatoes for the first time yesterday and they were delicious! Recipes for Bombay potatoes vary from family to family, it's one of those 'anything goes' recipes. My recipe is:

3 medium-large potatoes, peeled, cubed and nuked in the microwave for like 5 minutes. Don't want them to become too soft though.
Heat 5 tbsp vegetable oil in a non-stick frying pan, a karahi or a wok. Add 1tsp mustard seeds and 1/2 tsp cumin seeds (optional - add 1/2 tsp ground cumin later if you don't have cumin seeds) and cook gently until crackling, which shouldn't take longer than 30 seconds.
Quickly add 3 large cloves garlic, chopped, and as many chopped chillis as you like (leave out seeds if you don't want it hot).
Quickly, again, add 1/2 large onion or one small onion very finely chopped, mix into oil well and cook for a few minutes until soft.
Now the ground spices: 1/2 tsp garam masala, 1 tsp coriander, 1/2 tsp turmeric (+ 1/2 tsp cumin if you didn't use seeds) and 1/2 tsp salt. Stir into the onion really well and cook for 30 seconds.
Take 1-2 tomatoes, halved, cut into slices (like half moon shape) then cut into halves (like quarters of a round slice). Add them to the pan and stir them in.
Now, finally, it's time to add the potatoes. Just throw them in and stir really well to make sure they're coated with the spices. Cook on a medium-high heat until they're turning golden.
Serve with chappattis, naan or in a puda (savoury pancake made with gram flour).

I like potatoes anyway you can make them, my favorite would be Dutch Oven style. Thin sliced, cooked with onions, mushrooms, and bacon in the Dutch Oven for 3-4 hours, put some cheese on top, put the lid back on for another 10 min. mmmmmm sooo good! and it is definitely not fat free.

With only added butter and plenty of milk, my mashed potatoes are famous among my daughter's friends. Even their parents comment on the fame of my mashed potato.

I always say my secret is to put effort into it (maybe that's why I'm suffering with tennis elbow at the moment?).

Ive never eaten a bad potato dish.but my very favorite is sliced and fried slow with sliced onions.salt ,garlic and pepper,after they are uniformly brown. I put in a small amount of water add a lid and let steam till the water is gone.
serve with cream corn on top.

Anyway/Anyhow, I love potatoes.
French Fries, Fried, Boiled, Baked (in an oven with a crispy skin), Scalloped, Roasted, Twice Baked, Mashed...Just about anyway possible (except raw, I will eat them that way when dicing, but I like them cooked better!)

You can't beat mashed potatoe with butter, Thick gravy and either cranberry or mint sauce.
