i have a glut of apples rather than waste them, i would be grateful for any recipe suggestions

This Mountain Apple Cake is a bundt cake that I made, it calls for Granny Smith apples, but I used Fireside and it turned out absolutely great. The only other change I made was that the icing needed more liquid, I added some milk to that, and I used pecans but not walnuts.

INGREDIENTS
Cake:
3 cups all-purpose flour
1 teaspoon salt
1 teaspoon baking soda
2 teaspoons ground cinnamon
3 eggs
1 1/2 cups vegetable oil
2 teaspoons vanilla extract
2 cups white sugar
3 cups Granny Smith apples, thinly sliced
3/4 cup chopped pecans
3/4 cup chopped black walnuts

Topping:
1 cup brown sugar
1/2 cup milk
1/2 cup butter
1 teaspoon vanilla extract

Icing:
1 teaspoon mayonnaise
1 teaspoon vanilla extract
2 cups confectioners' sugar


DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Sift together flour, salt, baking soda, and cinnamon; set aside. Grease and flour an 8 inch Bundt pan.
Whisk together eggs, oil, and 2 teaspoons vanilla extract until smooth. Mix in sifted dry ingredients until moistened, then fold in sliced apples, pecans, and walnuts. Pour batter into prepared Bundt pan.
Bake cake in preheated oven until golden brown on top, and a toothpick inserted in the center comes out clean, about 1 1/2 hours. Stir together brown sugar, milk, butter, and 1 teaspoon vanilla extract in a saucepan. Simmer for 2 minutes, then pour over cake in the Bundt pan as soon as it comes out of the oven. Allow cake to cool in pan set over a wire rack until it is room temperature, about 4 hours.
Whisk together mayonnaise, 1 teaspoon vanilla extract, and confectioners' sugar until smooth. Unmold cake and place onto a serving plate, spread icing over the top.

Apple crumble is an easy dessert. Try this recipe.

800g Bramley Apples (or other cooking apples)
2 tablespoons Water
125g Flour (plain)
75g Caster Sugar
50g Ground Almonds
50g Walnut Pieces
50g Butter (at room temperature)
1.5 tablespoons Granulated Sugar
1/4 teaspoon Ground Cinnamon

1. Preheat the oven to 180°C (gas mk 4, 350°F). Peel, core and slice the apples.

2. Place half the apples in a baking dish, and sprinkle with one tablespoon of granulated sugar and half the cinnamon. Add the rest of the apple. Pour two tablespoons of water over the apples and then sprinkle them with a further half tablespoon of granulated sugar and the rest of the cinnamon.

3. In a bowl place the flour, ground almond, caster sugar and butter. Rub together using your fingertips until the mixture resembles breadcrumbs. Mix in the walnut pieces.

4. Cover the fruit with the crumble mixture - don't smooth it down.

5. Bake for about 45 minutes, until the crumble is browned and the apple is tender. Serve hot or cold.


If you don't like cinnamon then reduce or omit it.
The nuts can be left out, or others added to your own taste.
Use other cooking apples if you cannot get hold of Bramleys.
I add a few spoonsfuls of breadcrumbs for added texture.

You can make Apple Rings...
You need:
- 4 apples (McIntosh and Golden Delicious work well)
- 1 tablespoon of lemon juice
- 3 tablespoons of water
- And a string of sturdy thread or twine

Instructions:
Peel, core, and slice the apples into rings about 1/8 inch thick. Mix the lemon juice and water in a shallow dish. To prevent discoloring, dip each ring into the mixture, then pat dry with a paper towel.

String the fruit through the center of each ring and hang in a dry, warm place (near a fireplace or sunny window is ideal). The rings will take 1 to 2 weeks to dry, depending on the room conditions. You can periodically taste them to determine if they are ready (dry rings will have a chewy, almost leathery texture).

To expedite the process, dry the apples in a warm oven. Instead of strinning the rings, place them on a wire cooling rack that rests on a baking tray (so the air can circulate). Put the tray in a 150deggrees oven and allow the rings to dry for about 4 hours, turning once midway through. When the rings have no moisture left, remove them from the oven and eat, or cool before placing them in a small bag for storing. Makes about 30 rings.

This delicious recipe for applesauce cooks in your crockpot. You won't believe the delicious aromas that will fill your house while this recipe cooks.
INGREDIENTS:
3 lbs. Granny smith aples
1/2 cup brown sugar
1-1/2 Tbsp. lemon juice
1 tsp. cinnamon
PREPARATION:
Peel, core, and slice the apples. Combine in a 3-4 quart crockpot with the brown sugar and lemon juice. Cover and cook on high for 3-4 hours. Mash with a potato masher into the consistency you want.
Stir in cinnamon and serve warm or cold.

Crockpot Apple Butter
INGREDIENTS:
apples, peeled, cored and cut in quarters, to fill a 4-quart crockpot to 1 1/2 to 2 inches from top
4 tsp. cinnamon
1/2 tsp cloves
1/2 tsp salt
3 cups sugar
4 tablespoons water
PREPARATION:
Combine all ingredients in slow cooker. Cover and cook on HIGH until hot, then turn to LOW and cook all day (7 to 10 hours). When it is done and apples are fully cooked down put small amounts into food processor and pulse until smooth.
NOTE: If you are canning this, put into clean, sterilized jars and seal while hot, then process half-pints or pints 5 minutes in boiling water canner.


1,001 feet to 6,000 feet, process for 10 minutes, and above 6,000 feet, 15 minutes.

Ontario Apple Cinnamon Pinwheels

Ingredients:

2 cups dry biscuit mix 500 mL
1/3 cup Milk 75 mL
1/4 cup sour cream 50 mL
2 tbsp. soft margarine 25 mL
1/2 cup Packed brown sugar 125 mL
1 cup Peeled, diced Ontario Apples 250 mL
1 tsp. Ground cinnamon 5 mL
2/3 cup Icing sugar 150 mL
2 - 3 tbsp. Water 25 - 45 mL

Directions:

In large bowl, combine biscuit mix, milk and sour cream; mix gently until just combined.

Turn dough onto lightly floured board, knead 8 to 10 times. Roll dough into 14 x 10-inch (35 x 25 cm) rectangle. Spread dough with margarine; sprinkle with brown sugar, apples and cinnamon. Roll up dough lengthwise, jelly-roll fashion. Slice into 12 pinwheels.

Place each pinwheel, cut side up, in lightly greased muffin tin. Bake in 425¡F (220¡C) oven for 15 minutes or until light golden brown. Remove from oven; cool 5 minutes before removing from pan. Combine icing sugar and water, adding enough water to make a spreadable icing.

Carefully remove pinwheels from muffin tin. Spread with icing.

Serving Size: Makes 12 pinwheels

Baked Apple Dessert
INGREDIENTS:

* 1/3 cup butter, melted
* 2 cups oatmeal cookie crumbs
* 1/3 cup sugar
* 1 tsp. cinnamon
* 16-oz. can apple pie filling
* 1/4 cup slivered almonds

PREPARATION:
Preheat oven to 375 degrees F. In medium bowl, combine melted butter, cookie crumbs, sugar, and cinnamon and mix well to blend. In 1-1/2 quart casserole, layer half of apple pie filling and half of crumb mixture.
Top with remaining apple filling and remaining crumbs. Sprinkle almonds over all. Bake at 375 degrees F for 25-30 minutes until golden brown and bubbly. 8-10 servings

Apple pie
2cups thinly sliced apples 2medium
1/2 cup of raisins,1/2 cup of sugar,1tsp of ground cinnamon, 1/2cup of Bisquick mix,1/2 cup sour cream, 1/3 cup of half and half, 2tables of butter softened,2 eggs,heat 350 spray pie plate 9x11/4inches stir together all ingredients in order bake 40-45 mins sprinkle some cinnamon on top. keep refrigerated.

apple dumplings, there really easy to make and you could freeze them.

another thing is try apple pork chops(or baked ham) theyre really good. just slice the apples, put them in a sauce pan with cinnimon and sugar, cook until golden and put them over the pork chops or ham.
