Substitute club soda for the water in your recipe. It makes them fluffy and delicious.
Here's my recipe:
1 egg
1/2 cup milk
1/2 cup club soda
1 cup flour
2 tablespoons vegetable oil
1 tablespoon sugar
3 teaspoons baking powder
1/2 teaspoon salt
Blend egg, club soda, milk and oil. Blend dry ingredients together. Add to liquids. Beat until moistened. Batter will be slightly lumpy. Drip in pools onto greased, heated griddle. Pancakes are ready to flip when the pool of batter on the griddle is filled with bubbles and the first one or two bubbles have broken.
If you want, you can add chocolate chips or blueberries :)

This may be what you are looking for.
1 cup sifted all-purpose, pastry, or cake flour
1/8 teaspoon salt
1/2 tablespoon baking powder
2 egg yolks
3/4 cups milk, more or less
4 tablespoons butter, melted
2 egg whites
1 tablespoon sugar
1. Sift the dry ingredients together.
2. In another bowl, mix the yolks, most of the milk, and the melted butter together until smooth.
3. Make a well in the middle of the dry ingredients and add the mixed wet ingredients all at once. Stir until just combined. (Over-mixing will make for a tough pancake.)
4. Beat the egg whites until light and fluffy and soft peaks appear as for meringue. Add the sugar toward the end of the beating. Fold the egg whites gently into the batter with a spatula. Add milk as necessary to get the right consistency.
5. Cook as you would other pancakes.
The whipped egg whites result in extra light and fluffy pancakes. Hope you try this some time.

Light and Fluffy Pancakes: Ingredients: 2 cups milk 1 tablespoon lemon juice 1 large egg 3 tablespoons melted butter 2 cups flour 2 tablespoons sugar 2 teaspoons baking powder 1/2 teaspoon baking soda 1/2 teaspoon salt Directions: Whisk milk and lemon juice in a medium bowl and set aside to let thicken. In a separate bowl, whisk dry ingredients together - flour, sugar, baking powder, baking soda, salt. Whisk the egg and melted butter into the milk mixture. Create a little "well" in the center of dry ingredient bowl and pour the milky mixture in the center. Whisk gently until just combined, there should still be lumps. Heat a pan or griddle to medium heat and coat with butter or vegetable oil. Pour pancake mixture by 1/4 cups and heat until large bubbles come to the top (about 1-2 minutes). Flip the pancake and wait another 1-2 minutes.

I use the recipe from Joy of Cooking for buttermilk pancakes. Don't overmix the batter - a few lumps are fine. Let the batter set for about an hour before cooking on the griddle. Light and fluffy every time. And yes, I put some melted butter in the batter and then nothing but pure maple syrup on them.
If you don't have buttermilk, just make sour milk by putting some cider vinegar or lemon juice (1 Tbs. to a cup of milk) into your regular milk and let it "curdle" for about 5 minutes before you use it.

Pancakes
1 egg

1 cup flour
1 tablespoon sugar
3 teaspoons baking powder
1/2 teaspoon salt
Beat egg until fluffy.
Add milk and melted margarine.
Add dry ingredients and mix well.
Heat a heavy griddle or fry pan which is greased with a little butter on a paper towel.
The pan is hot enough when a drop of water breaks into several smaller balls which 'dance' around the pan.
Pour a small amount of batter (approx 1/4 cup) into pan and tip to spread out or spread with spoon.
When bubbles appear on surface and begin to break, turn over and cook the other side

Baking powder (which contains baking soda) is an excellent help here. The expanding gases of the baking soda produce more 'airiness". Also selzer water in place of water or just a bit with the milk. Selzer, not club soda, if you don't want to add more sodium to your recipe.

Separate the eggs. Whip the whites until you have peaks then fold them into the batter.
Using melted butter instead of oil in the batter will help. Whip the butter in before you fold in the egg whites.
Mouth watering pancakes.
The egg white idea works well with some of the breakfast cakes also.

i like them by the box, bisquick or krustan (sp). my trick is to use club soda instead of the liquid called for. light and airy every time.
