how would you translate "love you infinity" to french and spanish? thanks!!

Better you write it correct in English prior asking for a translation into different languages....!!
As far as I know (but I'm not English native speaker) the word "infinity" is a noun while in this context you should have used the adverb "infinitely".
If that's correct and yours is just a typo the 2 (literal) translations would be :

Spanish = Te amo eternamente
French = Je t'aime infiniment

However in all these languages (as well as in Italian, my mother tongue) it's much more used the future tense :

Spanish = Te amaré por siempre
French = Je t'aimerais pour toujours
Italian = Ti amerò per sempre
English = I will always love you

Je t'aime infiniment ou Je t'aime éternellement
or more often we say : Je t'aimerai pour toujours (for always...)
