Sounds really close to mine, I think the only thing I do different is use pickle relish instead of just pickle, and I add some Seasoned Salt for a little kick. Oh, I just saw you use celery seed, I don't, I chop up celery as I like the extra crunch.

This is not for a sandwich, but tuna salad.
2 cans tuna in water
1/4 cup cashews
1 T capers
1/4 cup chopped onion
2 cups chopped celery, well drained
3 cups cooked and cooled rice
Mayo:
1 cup mayo
1 T curry
1/2 t salt
1 t lemon juice
Mix first 6 ingredients. Mix mayo and stir in. Taste and add more salt, lemon juice, or curry to your taste. Serve on bed of leaf lettuce with crusty bread.

I love a really simple tuna sandwich. I add an onion and instead of Hellman's, I use Miracle Whip. People on here are gonna say that it's gross, but believe me you have to try it. I make tuna fish sandwiches and people have said they are the best. It's all about the Miracle Whip.

MAGIC TUNA FISH SALAD SANDWICHES
2 cans of tuna fish packed in water
1 bunch of green onions
3 jalapeno peppers
1 cup of bean sprouts
1 cup of fresh white mushrooms
1 medium tomato
several leaves of romaine lettuce
1 cucumber
3 tablespoons of mayonnaise (or if you're concerned about fat/calories use fat-free mayo)
parmesan or romano cheese (you can also top with sliced cheddar, monterey jack, pepper jack or muenster)
2- 4 slices of whole wheat bread
Chop the following ingredients into small pieces; green onions, mushrooms, set aside.
Slice jalapenos down the middle from top to bottom, discard seeds, chop into small pieces and set aside.
Slice tomatoes and peel and slice cucumbers, keep these ingredients seperate from the other veggies.
In a large bowl mix 2 cans of drained tuna, 3 tablespoons of mayonnaise thoroughly, add jalapenos, bean sprouts, green onions and mushrooms, stir ingredients until everything is mixed into tuna and mayonnaise.
Spoon this mixture onto a slice of whole wheat bread covering bread evenly, top with cheese, tomato slices, lettuce and cucumber slices and finish with a slice of wheat bread on top. Cut diagonally serve with a slice of pickle and enjoy!

You need more crunch...add some slivered almonds and some finely sliced green grapes. Also, top with some cheese or bean sprouts. I love tuna salad sandwiches too!

The only other things I add are 1 Tbs. lemon juice and 1 tsp. sugar, but sometimes also some fresh chopped parsley and/or chives for color as well as taste.
