Perhaps I should say that most of the time this happens. Can someone please explan to me why sometimes this occurs and the next time my cakes come out great?

Do you open the oven a lot? Do you shake the pan before baking? You should not do that if you are. Make sure you are mixing it long enough and do not have kids bouncing around while you are baking it. Those are things that can cause a cake to fall...

*follow the recipe very closely
* use fresh baking powder
*once the cake is in the oven, do not open the oven door to check the cake until the time is complete.

Are you opening and closing the oven door to look at? Is someone walking like an elephant around the oven? Are you at a heigh elevation? Could be alot of reasons.

Other than screwing up the recipe the only other thing is opening and closing the oven door during baking.

Do not open the door until the timer go off indicating it is done. Check with toothpick if it comes out clean it is done.

Because you are opening the oven door while it is cooking.
