According to evolutionists, if I'm right, mankind has evolved over millions and millions of years. Well, all those many years ago we learned how to use fire and began to cook meat, realizing it tasted better that way (never mind sushi). So, my question, since we haven't used our appendix in millions and millions of years to digest raw meat, why hasn't it disappeared yet. I mean, everything else about us has changed so much, what's up with that?

Well, maybe our diet doesn't consist of loads of uncooked meat, but if you like your steak cooked any way other than well done, some small portion of it is still raw. So you're still using your appendix, just not as much. Besides, evolution is about building advantages, so you're much more likely to gain a new organ than lose one you already have.

it hasn't been "millions and millions" of years since we've been eating raw meat; it's more recent than that (off the top of my head, in the 10s of thosands; for some humans, raw meat is still eaten).
In terms of evolution, that's a very brief timespan. In a few million years, it may be gone.
ADDED: No, it has NOT been thousands of generations.

Or an alternative question-
Why would an omnipotent being create us with unnecessary parts?
But to answer your question-
"The vermiform appendage—in which some recent medical writers have vainly endeavoured to find a utility—is the shrunken remainder of a large and normal intestine of a remote ancestor. This interpretation of it would stand even if it were found to have a certain use in the human body. Vestigial organs are sometimes pressed into a secondary use when their original function has been lost."

Sorry to burst your bubble but mankind hasn't been around for millions of years, A couple of thousand to be exact.
We are still the babies in out universe, we have so much to learn, we are destroying our planet and nobody has the ability to stop it.
The world is doomed if we are the most intelligent things on this planet. People should believe in science more than religion, it's the only way forward.
If we all waited on miracles from heaven and god or Jesus, then we wouldn't have developed medicines or cures to diseases, we would still think that God is angry when we have thunder and lightning.

And we don't actually know exactly what the appendix is - we only have the opinion that its function may be connected with digesting raw meat and we assume it has no function now because we don't know what it is. Ignorance and arrogance!

The appendix still has a function. It aids the immune system. Fortunately, it isn't critical. You could survive without your legs, too, but it wouldn't be quite so efficient.

We rarely suffer for having it although sometimes do.
Unless having an organ makes it harder to reproduce or raises the fatality rate it is not likely to change.

It can take thousands of generations for a vestigal organ to completely leave the phenotypic range of a species.
-------------
Yes, it has. And notice how much smaller it is compared to the ones herbivores have as a organ/body-weight ratio.
