Thats how a RC (Radio Controlled) airplane works.

On a bigger scale, sure we can. For example check out the MQ-1 or RQ-1 Predators.

Yes we can. Target drones is a very good example. These are used for surveillance and as flying target for guns and missiles. Actual size aircraft like the F-86 were extensively used for this purpose.

The procedure is very simple. Servos and actuators are used on board the aircraft to move the control surfaces, retract the landing gears and control the throttle etc. These servos are actuated from the ground control by radio waves which uses replicas of the aircraft's flight controls in the cockpit. Transponders provide the readings for speed, attitude, rate of climb/descent, engine controls and gauges to the ground station which then has a 3D configuration of the aircraft's performance. Normally the drones are recovered by homing devices otherwise they are tracked by radar and guided to a landing. Sometimes they are brought to the ground by deploying a parachute once over the launch area.

Yes. It can be done and is done most every day. They are called drones, and vary in size from wingspan of 2 ft, to full size aircraft.
The Air Force uses full size drones for air to air targeting. They fly from Tyndall AFB, FL. Currently using old QF-4 Phantoms, they have replace older QF-106 Delta Darts.
They are remotely flown by pilots on the ground using a cockpit similar to a simulator. It adds several monitors to give the pilot a view as if in the real cockpit.

if you mean an ordinary airline plane that just happens to fly over your backyard at 5k feet. NO. you can't hot wire a transmitter and cause it to crash.

however, if you mean an RC plane then its different. You would have an airframe that would house an engine, gas for that engine, and a multi channel transmitter/receiver on in the plane and another on the ground.

We can control missiles, which i guess are close to that. Since these are not piloted, it is not nessecary for them to have wings and stuff. So, nuclear missiles can be launched from a silo to blow up at some other point.

Search for UAV's. You'll find a lot of material.
