Being a Law Clerk isn't actually a career. It's a stage in a career.

Many Law students work in law firms as "Law Clerks" meaning they're paid diddly and do research and writing. In theory, they really aren't producing anything, it's a paid position to learn how law really works outside of school.

Many graduates of Law Schools become Clerks for Judges, and it can be a great line on a resume later on.

Sometimes a position is called "Law Clerk" in big firms, meaning someone that has a degree but no license yet.

It isn't a career. It's a job in a career. For some career plans, it's an important step, and worth the long hours at low pay, but not every lawyer went through it.

Boring? No, the whole idea of the position is you're trying to impress someone that knows you don't know anything useful. That's pretty exciting, as long as one believes it's actually possible.
