I caught a couple of sail cats, and I'm wondering if they're okay to eat.

Sail cats are Gafftop catfish where I live. They are good eating, I think they are better than freshwater catfish myself. Just be sure to cut out the red meat. Alot of people leave the redmeat in and cook it and say it tastes muddy. But in reality, its not mud they are tasting its bloody. When you cut out the red meat it makes the taste alot better.
If you catch a hardhead catfish, throw it back. They aren't worth it.

Sail Catfish

Cap'n Brad is correct. We caught gaff top (sailcats) in Galveston Bay Texas and threw them back generally until we started catching them that weighed 2 pounds or more..they are delicious as prepared as described by Brad.

Point of fact: there are very few fish that are actually not safe to eat. Almost all fish are palatable, obviously some taste better than others. Some people turn their nose up at Carp (the introduced species) while others love it. I've had it and it is a delicate flaky white flesh. So my remark is, try it before you condemn. This is a good place to find out how to prepare a particular species of fish for the table.

The meat on a Sailcat is "whiter" and less bloody. I find their fillets very similar in taste to a Whiting fillet. It's also not uncommon for a Sailcat to reach 5-8LB's making them much more easy to fillet than a Hardhead. Hardheads are also a bit more "bony" in my opinion. Eating any saltwater Cat is a "last resort" effort to get a fish dinner. If your gonna eat Cats- try Sailors Choice or bigger sized Grunts or Croakers. They eat better than any 'ole Cat will.

Yep. I'm not big on catfish, but we couldn't resist an experiment not too long back, caught a few nice sail cats, decided to take them home and clean them up. Get rid of the red meat, nasty nasty nasty, but the white meat isn't too bad at all.

Yep they are ok but like Capt Bradsaid and Gimmenamenow cut awat the darker strip of meat . I tried one a few weeks ago it was pretty good I fried one fillet just white meat and the other red and white . The white meat fillet was tastier and less of a fish taste
