Don't cook it so much - most people's experience of oatmeal is of some glop like wallpaper paste gruel.

Bring the water to a boil (about 25% to 50% less water than directions say), gently stir in the oats, bring back to a low simmer, cover immediately, let sit for 5 minutes (rolled oats) to 15 minutes (steel-cut oats/Irish oats). Don't use instant or 1-minute oats. I prefer steel-cut oats - grainier and more flavorful.

My favorite additions are butter, (real) maple syrup, and some raisins (which require adding a bit more water). I hardly ever add cinnamon, though some people like that. Experiment with various fruits (apple, banana?) and spices (nutmeg, vanilla, mace?). I've even heard of folks who like to add crumbled bacon - which I haven't tried, but I'm tempted. Other sweeteners include brown sugar, molasses, cane syrup, or white sugar - but I'm a maple syrup fan. Some people like to add some whole milk or light cream to cool it and pump up the creaminess, but I don't like that so much.

Anyone I know who has tried the path of good oatmeal as outlined above has become a convert. Maybe you won't, but it's worth a try. Good luck, and happy eating!

Oatmeal's basically a blank slate, so you can add almost anything to it.

First, butter or margarine or a little milk just so it's not like cement.

Then, try...

Chocolate syrup
Maple Syrup
Fruit Jam or Jelly
Nuts
Cinnamon and/or Nutmeg
Brown Sugar
Chopped Fruit
Mashed Bananas
Dried Fruit

Or some people make it savory instead of sweet. Like adding salt & pepper and some crumbled bacon.

Try anything that sounds good !

Make thick oatmeal, add a dab of butter, some sugar, and thin it with canned milk. Tear buttered toast and put it in the oatmeal. It is very rich and creamy this way. I grow up eating this and still do. Delicious!

THIS IS A FAMILY RECIPE, WE ATE WHILE GROWING UP SOAK IN COLD WATER THE OATMEAL, NOT THE INSTANT THE REGULAR ONE, THEN ADD BROWN SUGAR, CINNAMON, A DASH OF CLOVE, GINGER,AND A TEA SPOON OF SALT,AND A COUPLE OF ORANGE RIND,AND VANILLA, STIR AND BRING TO BOIL, LOWER FLAMES AND STAY THERE UNTIL DONE ABOUT 10 MINUTES STIRRING,IF MAKING FOR 4, WHEN DONE YOU SERVE AND ADD SOME MILK OR HALF AND HALF, NAMASTE,ITS REALY GOOD

Oatmeal, the healthy way can be enjoyed. I like mine with some of these combinations in it.

Mashed bananas is really good
Pure maple syrup
raisins
honey
finely chopped nuts (I like almonds, you can use)
a little butter
dash of salt
