Cook your bacon first and reserve some of the drippings to use instead of butter. Whisk 2 or 3 eggs with 2 or 3 Tbs. of milk. After your bacon is crisp the way you like it, drain on paper toweling, then crumble into pieces (or cut it before you cook it).

With skillet at medium heat and a thin coating of bacon fat in the pan, add your beaten eggs and season with salt and pepper. Gently lift the edges of the eggs to let the unset portions slide underneath. When eggs are just about set, add your crumbled bacon (and some cheese if you want) and fold the omelet over in half or thirds.

BACON & CHEESE OMELET

3 eggs
1 tbsp. butter
1/4 c. Velveeta cheese, mild Mexican
3-4 strips bacon

1. Fry bacon; set aside.
2. Mix eggs with fork just until whites and yolks are blended.

3. Heat butter in 8" skillet or omelet pan over medium high heat just until butter begins to brown. Tilt skillet to coat bottom completely.

4. Quickly pour eggs all at once into pan. Tilt skillet to evenly coat pan.

5. Add bacon and cheese, let stand over heat a few seconds to melt cheese and finish cooking egg. Then fold portion of omelet over covering bacon and cheese. Top with finely chopped bacon and eggs, if desired.
