Ways to add more veggies to your diet:
1) add veggies as toppings to your favorite sandwiches
e.g. dark leaf lettuce, shredded carrots, sliced tomatoes
2) determine your favorite veggies & make them snack easy
e.g. celery sticks, cherry tomatoes, cucumber slices
3) sneak them into your favorite foods & explore new ways to eat veggies
e.g. mix back beans into salsa
humus - makes a good dip for pita & an easy sandwich spread
try veggie soups - tomato soup, carrot & potato soup, fresh pea soup
shred cabbage & carrots to top your favorite green salad or pasta salad
grill veggies or roast them (e.g. roasted sweet potatoes, grilled eggplant, zucchini)

You dont just have to eat vegetables to be healthy, you can eat alot more things. For breakfast, eat cereal or eat a healthy breakfast, like pancakes, eggs, etc. Also, you can take vitamins in the morning you it can give you energy through the entire days. Then, at lunch you can make a ham sandwich on wheat break, or turkey is even better. There is also fruits that you can eat too that are healthy. Also, make sure whatever you eat doesnt have any grease and things like that.

I'm not much of a veggie lover myself but I've grown to love grilled zucchini. Just slice it into thin slices and marinate in Italian dressing, then grill it. It is delicious.

Roasting in the oven with garlic and olive oil is my favorite way. You can do that and blend them with some broth to make a yummy cream soup.
